I don’t know the answer and there probably is no definite answer. It depends on so many factors.
Generally, perceived high valued crops or products is the way to go. So that you can get premium prices.

Hope you are doing well. Looks like our hydroponic venture is progressing along. Would you happen to know any yield data from kale and cilantro that you could share with me? We are planning on a 25,000 square foot room that would give us ~100,000 SF of actual growing surface (after you take out for walkway aisles). Would it be best if we spoke by phone?
Thanks for any direction that your wisdom and experience would be able to take me.
